Today, Christian Constant manages this famous Toulouse landmark, open seven days a week, which is the rare eating establishment where reservations are not needed. The interior is a whirl of panelling, stucco mouldings, mosaics, and other Baroque follies that give the restaurant the dimensions of an old brasserie, but with a true bistro style.
In the kitchen, the classics revisited by the chef will not disappoint: duck foie gras terrine with an apricot and onion chutney in sweet spices, squid fricassee with chorizo, or braised beef cheek stew in red wine and melting carrots.
